A specialist in raising Matsusaka Ushi, Ito Farm has over 60 years of experience of doing so. Pure-bred black wagyu heifers are carefully fattened for close to 40 months to achieve a well-distributed and extremely refined marbling and a melt-in-the-mouth texture. Ito Farm has been awarded for three consecutive years in the Grand Champion Cattle Prize in the prestigious annual Matsusaka Beef Carcass Contest, demonstrating the farm’s expertise and craftsmanship in raising exceptional cattle.

Individual Identification NumberAll Japanese wagyu pedigree are affixed with an individual identification number so they can be traced back to their farm of origin. Each calf has its date of birth, bloodline, breed, farm and place of birth recorded.
What is BMS?
Answer: BMS stands for Beef Marbling Standard, which indicates the amount of marbling in wagyu beef. It is measured on a scale of No. 1 to No. 12 by examining the marbling of the rib eye and its surroundings. A score of 12 represents the highest level of marbling.
