city’super purchases whole black wagyu Otome Ushi, or heifers, that are over 30 months old from Yamagata Prefecture. This type of cattle is very rare and precious, and makes what is considered the best Yamagata beef on the market. Through long-term fattening, the melting point of the fat of Otome Ushi can be as low as 14.7℃, which is much lower than that of normal wagyu, at 25.9℃. The low-fat-melting point guarantees a melt-in-the-mouth experience.
A specialist in raising Matsusaka Ushi, Ito Farm has over 60 years of experience of doing so. Pure-bred black wagyu heifers are carefully fattened for close to 40 months to achieve a well-distributed and extremely refined marbling and a melt-in-the-mouth texture. Ito Farm has been awarded for three consecutive years in the Grand Champion Cattle Prize in the prestigious annual Matsusaka Beef Carcass Contest, demonstrating the farm’s expertise and craftsmanship in raising exceptional cattle.
Both Yamagata Gyu Beef and Matsusaka Beef are A5 Grade Wagyu, but how are they different? Try this tasting set and find out for yourself.
