• Flavour: Soy sauce-based
• Features: Crab broth and Hidaka kelp. The white soy sauce enhances the umami.
• Recommended ingredients: Crab, Chinese cabbage, enoki mushrooms, spring onions, kinu tofu.
• Recommended finishing dish: Zosui (rice porridge).
• How to use: Put the soup to the boil in a pot and add the ingredients in order of hard-to-cook items first. Eat when cooked. When all the ingredients are finished, add rice, heat over low heat for a few minutes, and eat as porridge. It is also tasty with a beaten egg or spring onions added.
